MAKES: 6 to 8 appetizer or 4 main-dish servings

TIME: 30 minutes

INGREDIENTS:

  • 1 pound thick or thin fish fillets or steaks without skin or bones (raw or cooked)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • Salt and freshly ground black pepper or cayenne
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup chopped fresh parsley or cilantro
  • Neutral oil, like grapeseed or corn, for deep frying
  • Lime wedges for serving

INSTRUCTIONS:

  1. Chop the fish with a knife and shred it with your fingers if it’s cooked, or keep chopping until finely chopped if it’s raw.
  2. Combine the fish with chopped onion, minced garlic, and season with salt and pepper or a little cayenne. Mix well with a wooden spoon.
  3. Add the flour and stir, then beat in the eggs one at a time. Gradually add water until a batter forms, slightly thicker than pancake batter. Stir in the chopped parsley or cilantro.
  4. Let the mixture rest while heating at least 2 inches of oil in a deep pan to 350°F over medium-high heat.
  5. Gently drop spoonfuls of the fish mixture into the hot oil and fry, turning once, until golden brown (about 5 minutes total). Work in batches to avoid overcrowding.
  6. Drain the fritters on paper towels and sprinkle with more salt if desired. Serve with lime wedges or keep warm in the oven until ready to serve.
