INGREDIENTS:

  • 1 cup half-and-half cream
  • 1 cup sugar

  1. Place the raspberries in a blender and process on medium-high speed until they are chopped. Set them aside.
  2. In a large saucepan, heat the half-and-half cream to 175°F (80°C). Stir in the sugar until dissolved. Remove the saucepan from the heat and stir in the heavy whipping cream and vanilla extract. Gently fold in the chopped raspberries. Refrigerate the mixture until it is chilled.
  3. Fill the cylinder of an ice cream freezer two-thirds full and freeze it according to the manufacturer’s directions. Refrigerate the remaining ice cream mixture until you are ready to freeze it. Once the ice cream is frozen, transfer it to a freezer container and freeze for 2-4 hours before serving.
