  • 3 to 4 pounds spareribs, cut into individual ribs, excess fat removed
  • Salt and freshly ground black pepper
  • 3 bay leaves
  • One 11/2- to 2-pound head Savoy or green cabbage, cored and shredded
  • 1 cup dry white wine, chicken stock, or water
  • Chopped fresh parsley leaves for garnish

 

INSTRUCTIONS:

  • Heat olive oil in a large, deep pot or Dutch oven over high heat. Add crushed garlic and dried red chiles, allowing them to sizzle briefly.
  • Place the spareribs in the pot, meaty side down, and sprinkle with salt and pepper. Add bay leaves and let the ribs brown on all sides, adjusting the heat to achieve a nice browning.
  • Remove the ribs from the pot and pour off any excess fat. Add the shredded cabbage, salt, and pepper to the pot, and cook until the cabbage begins to brown.
  • Stir in the wine, scraping any brown bits from the bottom of the pan. Return the ribs to the pot, adjust the heat, and cover. Allow the mixture to simmer gently until the ribs become tender and the cabbage softens.
