INGREDIENTS:

  • 250g/9oz ribbon noodles
  • 1 tablespoon sesame oil
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 6 spring onions, cut into matchstick strips

For the dressing:

  • 5 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon tahini
  • 4 drops of hot pepper sauce
  • Salt, to taste

 

PREPARATION:

  1. Preheat the grill to medium heat.
  2. Cook the ribbon noodles in a large pot of salted boiling water until they are almost tender. Drain in a colander, rinse with cold water, and drain thoroughly. Transfer the noodles to a bowl, stir in the sesame oil, cover, and chill in the refrigerator.
  3. Place the peppers under the grill and cook, turning them frequently, until they are blackened on all sides. Remove the peppers from the grill and plunge them into cold water. Peel off the skin, cut the peppers in half, remove the core and seeds, and cut the flesh into thick strips. Place the grilled pepper strips in a covered container and set aside.
  4. In a small bowl, mix together the sesame oil, soy sauce, tahini, hot pepper sauce, and salt to make the dressing.
  5. Pour the dressing over the chilled noodles, reserving 1 tablespoon for later. Toss the noodles in the dressing until well coated.
  6. Add the reserved grilled peppers to the noodles and gently toss to combine.
  7. Spoon the reserved dressing over the noodles and peppers.
  8. Scatter the matchstick strips of spring onions over the top of the dish.
  9. Serve the chilled noodles and peppers as a refreshing appetizer or side dish.
