INGREDIENTS:

  • 1 1/4-ounce package unflavored gelatin
  • 1/2 cup freshly squeezed lemon juice
  • 4 eggs
  • 1 tablespoon grated or minced lemon zest
  • 1/2 cup sugar
  • 1 cup cream

  3. Warm the gelatin mixture over low heat, stirring occasionally until the gelatin completely dissolves. This usually takes just a minute or two.
  4. Allow the gelatin mixture to cool for 1 minute, then stir it into the beaten egg mixture. Work quickly to ensure the gelatin doesn’t set prematurely.
  5. Whip the cream until it holds soft peaks. Make sure the whipped cream is thoroughly whipped but not overbeaten.
  6. Stir the whipped cream thoroughly into the egg and gelatin mixture, ensuring all ingredients are well combined.
  7. Refrigerate the mousse, stirring occasionally during the first hour or two, until well chilled. The chilling process allows the mousse to set and develop its light and airy texture.
  8. Serve the lemon mousse on the same day it is prepared for the best taste and texture.

 

VARIATIONS:

  • Pomegranate Mousse: For a unique twist, substitute 1 cup of pomegranate juice for the lemon juice. Omit the lemon zest and use 2 egg yolks and 3 egg whites in place of the 4 eggs.

 

  • Lemony Yogurt Mousse: Create a lighter version by substituting yogurt for the cream and using 3 egg whites instead of 4 eggs. Omit the lemon juice. In Step 1, combine the yogurt, lemon zest, and sugar, beating until mixed and slightly aerated. Proceed to beat the egg whites as directed and incorporate them into the mixture.
