INGREDIENTS:

  • 6 cooked medium blue swimmer crabs
  • 50g/2oz butter
  • 2 garlic cloves, finely chopped
  • 1/2 red pepper, seeded and finely chopped
  • 1/2 green pepper, seeded and finely chopped
  • 1 small onion, finely chopped
  • 1 celery stick, finely chopped
  • 1/2 fresh red chili, finely chopped
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon dried thyme
  • 175ml/6fl oz canned condensed seafood bisque
  • 75g/3oz fresh breadcrumbs
  • Salt and freshly ground black pepper

 

PREPARATIONS:

  1. Preheat the oven to 200°C/400°F/Gas mark 6.
  2. Pull away the crab legs and claws, crack them open, and extract the meat from the legs. Reserve 2 front claws on each crab.
  3. Lift the flap on the underside of the crab and carefully remove the top shell. Remove the soft organs and pull off the gills.
  4. Scrub the crab back shells and set them aside. Shred the crab meat, making sure to pick out any shell fragments.
  5. In a pan, melt the butter and add the chopped garlic, peppers, onion, celery, and chili. Cook over medium heat, stirring, for about 5 minutes.
  6. Add the celery salt, dried thyme, and seafood bisque to the pan. Cook for 3 minutes.
  7. Add the shredded crab meat to the pan, along with half of the breadcrumbs. Stir until well combined. Season with salt and pepper to taste.
  8. Spoon the crab mixture into the crab shells, smoothing the tops. Press the remaining breadcrumbs over the surface of each stuffed crab.
  9. Place the stuffed crabs on a baking tray and bake in the preheated oven for about 15 minutes, or until heated through and golden.
  10. Towards the end of cooking, add the reserved extra claws to the baking tray to warm through.
  11. Serve the stuffed crabs hot.
