- 2 tablespoons margarine
- 1 cup shredded Cheddar or Monterey Jack cheese
- 1 tablespoon plus 1/4 cup diced tomato
- 1 tablespoon diced jalapeño pepper
- Cajun seasoning, to taste
- 1/2 cup shredded lettuce
- 1/4 cup sour cream
- 1/4 cup salsa, for dipping
INSTRUCTIONS:
- Place the chicken breast in a bowl and pour the Italian salad dressing over it. Allow the chicken to marinate in the refrigerator for 30 minutes.
- Preheat a grill and cook the chicken breast for approximately 5 minutes, or until it is cooked through. Remove from the grill and let it cool slightly. Cut the cooked chicken into 1/4-inch pieces and set aside.
- Brush one side of the tortilla with margarine and place it in a frying pan over medium heat.
- On one half of the tortilla, evenly distribute the shredded cheese, 1 tablespoon of diced tomatoes, diced jalapeño pepper, and Cajun seasoning. Make sure to spread the toppings to the edge of the half and top with the diced chicken.
- Fold the empty side of the tortilla over the toppings, creating a half-moon shape. Flip the quesadilla over in the pan so that the cheese is on top of the chicken.
- Cook the quesadilla for 1-2 minutes per side, or until it is heated throughout and the cheese is melted. Remove the quesadilla from the pan and transfer it to a serving plate. Cut it into wedges on one side of the plate.
- On the other side of the plate, arrange the shredded lettuce and top it with the remaining 1/4 cup of diced tomatoes. Place dollops of sour cream on top of the tomatoes. Serve your favorite salsa in a small bowl on the side for dipping.
