INGREDIENTS:
- 1/4 cup oil
- 1 cup chopped onion
- 1 (14 ounce) can diced tomatoes
- 2 cups chicken broth
- 1 teaspoon minced garlic
- 1 teaspoon thyme
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups diced potatoes
- 1 1/2 cups sliced carrots
- 2 cups chopped chicken breasts
INSTRUCTIONS:
- In a large pot, heat the oil over medium heat. Add the chopped onion and sauté for approximately 2 minutes until the onion becomes translucent and fragrant.
- Add the diced tomatoes (including the liquid), chicken broth, minced garlic, thyme, bay leaf, salt, and pepper to the pot. Stir well to combine all the flavors.
- Increase the heat and bring the mixture to a boil. Once it reaches a boil, reduce the heat to low and let it simmer for about 30 minutes, allowing the flavors to meld together.
- Add the diced potatoes, sliced carrots, and chopped chicken breasts to the pot. Stir gently to incorporate all the ingredients.
- Continue to simmer the stew until the vegetables are tender and the chicken is cooked through, approximately 30 minutes. Be sure to check the doneness of the vegetables by piercing them with a fork.
- If you desire a thicker stew, you can use cornstarch as a thickening agent. In a small bowl, mix a tablespoon of cornstarch with a little water to create a slurry. Slowly pour the slurry into the pot while stirring the stew continuously. Allow the stew to cook for an additional 5 minutes, or until it reaches the desired thickness.
- Remove the bay leaf from the stew before serving. Ladle the hearty chicken stew into bowls and enjoy it as a comforting and nourishing meal.
