INGREDIENTS:

  • 1 large red capsicum, thickly sliced
  • 4 medium sebago potatoes, cut into 4cm pieces
  • 1 large eggplant, cut into 4cm pieces
  • 1 large green capsicum, thickly sliced
  • 1 bulb garlic, halved crossways
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons lemon juice
  • 1/3 cup mint jelly, warmed
  • 8 lamb loin chops, trimmed
  • 1 tablespoon fresh thyme leaves

 

INSTRUCTIONS:

  1. Preheat the oven to 200°C/180°C fan-forced. Place the potato, capsicum, and eggplant in a large roasting pan. Drizzle with 1 1/2 tablespoons of olive oil and toss to combine. Add the halved garlic bulb to the pan. Roast for 45 minutes.
  2. While the vegetables are roasting, combine the mint jelly, lemon juice, and fresh thyme leaves in a bowl. Heat the remaining olive oil in a large non-stick frying pan over medium-high heat. Add the lamb loin chops and cook for 2 minutes on each side or until browned. Remove the lamb from heat and brush both sides with half of the mint jelly mixture.
  3. Arrange the lamb chops over the roasted vegetables in the pan. Season with salt and pepper. Continue to roast for a further 20 to 25 minutes, brushing the lamb with the remaining mint jelly mixture halfway through cooking.
