INGREDIENTS:

  • 3 large eggs
  • 1 1/4 cups buckwheat flour
  • 3/4 cup nonfat milk
  • 1/4 cup vegetable oil, plus additional for skillet
  • 1/4 teaspoon salt
  • 1 1/4 cups (or more) water

 

INSTRUCTIONS:

  1. In a medium bowl, place the buckwheat flour. Whisk in the eggs, 1/4 cup of vegetable oil, nonfat milk, 1 1/4 cups of water, and salt. Ensure that all the ingredients are well combined, resulting in a smooth batter.
  2. Heat a 10-inch-diameter nonstick skillet over medium-high heat. Brush the pan with a small amount of oil to prevent sticking.
  3. Pour 1/4 cup of the batter into the skillet, tilting it gently to coat the bottom evenly. Allow the crepe to cook until golden brown on the bottom, adjusting the heat if needed to prevent burning. This process usually takes about 30 to 45 seconds.
  4. Using a spatula, carefully flip the crepe over and cook for an additional 30 seconds on the other side. The crepe should be lightly golden and cooked through.
