INGREDIENTS:

  • 1 quart fresh Ontario strawberries
  • 1 1/4 cups white sugar, separated
  • 2 cups heavy whipping cream
  • 1/2 teaspoon vanilla extract

 

NOTES:

  • You can adjust the amount of sugar according to your personal taste preference.

 

INSTRUCTIONS:

  1. Wash and hull the strawberries. Place them in a bowl and mix in 1/4 cup of white sugar. Cover the bowl and refrigerate overnight. This allows the strawberries to release their natural juices and infuse with the sugar.
  2. Crush the strawberries using a blender, food processor, food mill, or by hand using a potato masher or fork. You want to achieve a smooth and pureed consistency.
  3. In a separate bowl, combine the heavy whipping cream, remaining 1 cup of white sugar, and vanilla extract. Mix well until the sugar is dissolved.
  4. Add the mashed strawberries to the cream mixture and stir until everything is well combined. The creamy base will be infused with the sweet strawberry flavor.
  5. If you have an ice cream maker, pour the mixture into the machine and follow the manufacturer’s instructions for churning. This typically involves a process of spinning the mixture and freezing it simultaneously to create a smooth and creamy ice cream texture.
  6. If you don’t have an ice cream maker, you can still make the ice cream by placing the mixture in the freezer for 30 minutes initially. Remove it from the freezer and beat it with an electric mixer for 2 minutes or whisk it vigorously for about 10 minutes to incorporate air and prevent ice crystals from forming. Place the mixture back in the freezer and continue freezing until it reaches a solid consistency.

 

TIPS:

If you can’t find fresh Ontario strawberries you can use frozen berries, just mix with sugar and thaw overnight in the fridge.
