INGREDIENTS

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth (warmed)
  • 1/2 cup dry white wine (optional)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil leaves for garnish (optional)

INSTRUCTIONS

  1. Preheat and Prepare: Begin by warming the chicken or vegetable broth in a separate pot over low heat. It’s essential to have warm broth ready throughout the cooking process.
  2. Sauté the Aromatics: In a large skillet or a wide, heavy-bottomed saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped onion and sauté for about 2-3 minutes until it becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Toast the Rice: Add the Arborio rice to the skillet with the onions and garlic. Stir to coat the rice evenly with the oil and cook for 1-2 minutes, allowing the rice to toast slightly. This step enhances the nutty flavor of the rice.
  4. Deglaze with Wine (optional): Pour in the dry white wine (if using) and stir continuously until the liquid is mostly absorbed by the rice, about 2-3 minutes. This step adds complexity to the flavor of the risotto.
  5. Begin Adding Broth: Start the process of gradually adding warm broth to the rice. Add about 1/2 cup of broth at a time, stirring constantly. Allow the liquid to be mostly absorbed by the rice before adding more broth. Continue this process until the rice is tender but still slightly firm to the bite, which typically takes about 18-20 minutes.
  6. Stir in Parmesan Cheese and Butter: Once the rice reaches the desired consistency, remove the skillet from the heat. Stir in the remaining 1 tablespoon of butter and the grated Parmesan cheese. This will give the risotto its signature creamy texture and rich flavor. Season with salt and freshly ground black pepper to taste.
  7. Let It Rest: Cover the skillet with a lid and let the risotto rest for 2-3 minutes. This allows the flavors to meld and the risotto to become even creamier.
  8. Serve and Garnish: Serve your Classic Italian Risotto hot, garnished with fresh parsley or basil leaves if desired. It’s the perfect accompaniment to grilled vegetables, seafood, or as a standalone dish.

Enjoy the velvety goodness of this classic Italian rice dish. Risotto is not just a meal; it’s a culinary experience that embodies the heart of Italian cooking—simple ingredients, meticulous attention, and the pursuit of pure flavor. With this recipe, you can bring a taste of Italy to your table and savor the magic of risotto anytime you desire. Buon appetito!
